Logging Emails

    I don't really know where to put this or whether anyone can help but anyway, a customer of mine is looking to log every single email that he receives on a certain domain so he can produce a log/report, which I presume will be passed on to his boss so he/she can see who he's been in contact with and so forth. I'll be able to produce a report myself by going through my server logs, right? But is there an easier way, preferably where the customer can do it himself with a piece of software or within his cPanel?

    Just have the e-mails forwared to his boss.
    After about a week, he will get sick of all the spam and forget about the whole thing
