Is there a fix for this? Every time someone logs in to their cpanel, it shows "Last login from 127.0.0.1"

It's supposed to read "Last login from IP"

Creates a problem for attempting to do a reverse tracert from the server to client as well (as it shows localhost IP instead of client IP)

    Thanks for any ideas/suggestions

No. cPanel have a problem with this feature because they tunnel the traffic over a secure connection. Because of the way tunnelling works, it will always appear as though the connection is from the localhost. They'd need to programmatically tackle this somehow, I suspect.
