I want to host email on a different server then I host websites. Both servers will have CPanel installed on them. I know you change the MX record to the new IP of the server that will be the email host, but how do I add the email address within CPanel so that people can check their mail?

If has an MX record pointing to 12.34.567.890 how does the CPanel on that IP setup the mail accounts?

You simply create the same on both servers. On the web server, remove the domain from /etc/localdomains and add it to /etc/remotedomains .

On the email server, create the email accounts you want.

I'd also verify/modify the DNS zone on both machines and make sure the entries all point to the appropriate machine; the zones should be identical between the two.
