Let me give some background on my goal first, then 2 options I see to make this happen.
I am start a company. Each employee would be given their own email address for business use. I would want to see all incoming or outgoing email from each employee.

I see 2 options to accomplish this:
All incoming and outgoing mail is automatically to my email address.
All incoming and outgoing mail is automatically available as an archive file or something, which I could view at my discretion.
I could forward it to my email but user could see route. Everything have to be done secretly.

Is this possible? If so, how would I go about setting this up?

    Thanks in advance.

MailScanner with the MailWatch interface is one solution.

    Try IMAP

Have you tried IMAP? Inbox and sent items are stored in the server.

You just enable your users accounts in your computer and it will sync on their computers and yours.
