I need to get MySQL running the Greek character set by default on a cpanel server. Is this possible?

I've tried all sorts of my.cnf entries and even altered the start command line in /etc/rc.d/init.d/mysql but it doesn't seem to be able to handle it.

If I need to compile MySQL from source will it still work with cpanel?
