If I have my cpanel server hostname as cpanel.domain.com and cpanel is doing dns for domain.com I want to have ns records for domain.com and hosted domains to be a.ns.domain.com and b.ns.domain.com instead of ns1.domain.com and ns2.domain.com is all I have to do in WHM is add dns entries for the a.ns and b.ns subdomains and have the name servers setup right at the registrar's and also have them as the domain's ns records and put them in as the Primary and Secondary name servers in the 'Edit Setup' field right?

Or does cpanel use ns1 and ns2 by default/via some setting somewhere?

Just a little sanity check ;p
    TIA
    Dan

You can add the nameserver names you want right in the setup in the whm.. after you add them, click the "add A record entry" button for each one and it will add the A records to the DNS zone.
