How do I ensure that any custom ACLs I put into the Exim configuration editor aren't overwritten by any future upgrades to either Exim or cPanel?

As long as you're using the Exim Configuration Editor (or Advanced Exim Configuration Editor) via WHM, your custom ACLs will be preserved through future upgrades.

That's a relief to hear. Thank you for clarifying this for me.
