I used to have a client on a server who had his own nameserver IP's. He moved to a dedicated server so those IP's are still sitting there on my server.

Now I need to set up a new account with dedicated nameservers. The old client's nameservers still show in Main >> Networking Setup >> Nameserver IPs

If I delete those, it won't delete the IP's off the server, will it? I guess what I need to know is step by step how to reassign those IPs to new nameservers.

I went to DNS Functions >> Edit DNS Zone but the old customers nameservers aren't showing in there. I want to be careful that I don't break something.

no, if you delete the nameservers IP, the IP will returned to IP spool
