    Go on, have a guess
Depends on how you installed it. If you installed a version other than the one cPanel used to provide (or I provide), for example the "rpm" version, then you can usually use some or all of:

    service MailScanner stop
    chkconfig MailScanner off
    rm -f /etc/exim_outgoing.conf
    /scripts/buildeximconf
    /etc/init.d/exim restart

    rm -Rf /etc/MailScanner
    rm -Rf /usr/bin/MailScanner
    rm -Rf /usr/sbin/*MailScanner*
    rm -Rf /usr/lib/MailScanner
    rm -Rf /usr/src/MailSCanner
    rm -f /etc/cron.hourly/update_virus_scanners
    rm -f /etc/cron.daily/clean.quarantine
    rm -Rf /var/spool/MailScanner
    rm -Rf /var/spool/exim_incoming

Check root crontab and delete any MailScanner entries.
