Relocating Email

I have a couple servers that are being hit hard with email and spam. I am running MailScanner from ConfigServer and it does a good job, however I would like to relocate email to a server dedicated just to processing email. Is there a way to do this already like an addon etc? If anyone can give me some ideas it would be helpful.
