I work for a host and we need to set some server names. I was wondering how we go about this. We have a reseller with WHM. We want to change the name shown in the cPanel that the users see!

That is not really what I am looking for, you know in cPanel where it shows "Server: Servername" I want to change that

You cannot do this with a reseller account. You must have root access to the server, either dedicated server or VPS.

If the server name reveals your provider then it is time to find a new provider. Find someone that offers an anonymous host name. Most companies that sell reseller accounts that know what they are doing will have anonymous hostnames.

When shopping for a host ask them the hostname (because it is not only displayed in cPanel but also in the headers of the emails) and then do a who is on the main domain on the hostname. It should be set to private registration. This way no one can track back to the provider.
