My server is showing:

Server Load: 0.38 (4 cpus)
Memory Used: 37.3% (sometimes goes to 47%)

I have under 100 domains but will be adding more soon. The server is a dual xeon, runnin red hat 3 with 1 gb memory.

What is considered a good server load? And when should I start worrying about the amount of memory being used?

Just wondering.

A dual xeon will generally run well with loads close to 3.75 depending on whats running of coarse (mine do anyway ) I aim to keep it 2 or below

the load average is not a solid do not want to go above number, its very flexible. A server running a little above 2.0 (dual processor) 1.0 for a single for a short amount of time is fine. On my xeon I have had spikes at 6 and it handled ok for a few minutes with no real slow down & it runs ocationally at 3ish durring backup

Most of the time the load is under 1.0
