It would not possible to convert cPanel's maildir configuration to mbox. About 6 years ago (2005), cPanel & WHM shifted away from using mbox in favor of maildir:

cPanel Moves from MBOX to MAILDIR - cPanel Inc.

In 2008, support for mbox was discontinued:

[cPanel-News] Important FreeBSD & Mbox Information

Therefore cPanel & WHM are not compatible with mbox. It would not be possible to configure your cPanel & WHM server to in a supported method to utilize mbox.

You can read about the various benefits of Maildir over mbox here:

http://www.courier-mta.org - Benchmarking mbox versus maildir

If you do actually have any mail still stored in mbox format that you need to manually convert over, this can be done with:

    /scripts/convert2maildir

However, unless you've manually copied mail over it's likely unnecessary to perform that command. This is because all mail is converted from mbox to maildir anyway during the account copy process (should you be migrating/restoring a very old account).
