So I want to "play" around with cpanel, linux, etc etc... On a local machine... Is there somewhere I can find some easy instructions ? Or is there a "package" out there with all these things together? Similar to MySql community edition?

Your easiest way to test cPanel would be to purchase a domain and rent a VPS or small server for a month at an approved Hosting Provider, really. Running a server locally has its own hurdles to overcome.
