If we were to shift a domain to a new server, would we still be able to use the SSL certificate on that new server since the IP address will be different?

Just make sure the httpd.conf entries are on the new server and the SSL certificate files are copied over.

If you use the WHM copy account function, it will also copy the certificate files and entries. Just make sure you also tell it to give the account a dedicated IP.
