SSL install when Email on one server, site on another

OK so, I have a client who's email is on a server, not ours, and we host their website.

Let's encrypt won't allow me to install a cert for the site, as the domain does not resolve to us.

Is there a quick fix for this?

Or is the only way for them to point the domain DNS back to us, then we point the MX back to them?

Hello,

You can either ensure the "A" record for the domain name points to the IP address associated with the cPanel account at the DNS host of this domain name. Or, simply update it's name servers to use the ones associated with the cPanel server, and then configure the MX records for the domain name so they point to the remote mail server using "WHM >> Edit MX Entry" or "cPanel >> Zone Editor".
