How to make Sub-domain IP different from Domain?

The webhost I recently joined uses cPanel 6. My domain name points to their nameservers. My question is.... my website is at www.mydomain.com But I would like to create a subdomain ex: example.mydomain.com that would act like an IP address. Ex: example.mydomain.com could be a game server, or another server, on a different IP from my webhost. Even my own IP at home if needed.

My question is how do I set this up? And if I can't do it through cPanel, what can I tell my host to do. I need EXACT STEPS because my host seems to not know what to do. WHM is installed I believe, if that is needed.

    Thanks in advance.
