There is no separate file to maintain logs for the creation of sub-domain/addon domain. You will have to look into int file / usr / local / cpanel / logs / access_log

When people want to see this behavior, I always recommend they create a subdomain and then delete it while watching the /usr/local/cpanel/logs/access_log in real-time. That will give them the specific log entries they need to search for previous issues.
