I am currently running suexec but would like to change to suphp.

Is there a tutorial somewhere that explains how I could do this? I've never done it before.

Just go to WHM -> Software -> Apache Update and check the boxes to indicate what you want and let it handle the rest for you :).

Note, SuExec is for CGI scripts and SuPHP is for PHP (if it is not running as CGI, running PHP as CGI is an atypical setup).

Thank you very much, I had no idea it was so easy to do.

Is it possible to upgrade to the newest php version via this method too?

Yes it is possible -- you can choose which version(s) of php to use when running Apache Update.
