Would you consider it copyright infringement and take offense if I created a website offering free cPanel support that included the word "cpanel" in my domain name?

Although this is not an "official" ruling. I would assume it not an issue as long as you do not try to portray yourself as cPanel and not infringe on their business. There are many sites that use cPanel in their domain name, (I myself own one of them).

Your best option is to e-mail billing [at] cpanel.net and get the official answer. ;)
