How can I train Spamassasin to recognize spam vs ham?

i.e. when a spam message gets through, how can I tell SA that "This is spam?" And the flip-side of that is when a message is marked as spam, how can I tell SA that "This is NOT spam?"

Most likely of importance is the fact that I only use email forwarders to an outsourced mail server. But before my messages are forwarded, SA does scan them.
