When I transfer a site from one server to another, what is transferred and what is not? Also, does the website on the original server get deleted or remains as well?

I would imagine that the whole home dir gets copied, and the appropriate stuff happens, (named.conf, httpd.conf, etc.), and I think it gets "transfered", not "copied", but dont quote me on that. I have never actually tried.

It doesn't remove the site from the old server.

I've had pretty good success with transfering accounts from one server to the other, the only exception being SQL databases occasionally get corrupted for some reason, especially large ones. So make sure you poke around and check stuff, just to make sure.

oh yeah. DBs if they are bad, I export them, delete them, recreate them, and import them and they work great.
