Cpanel -> Mail -> Spamassassin -> To simply have the server DELETE and NOT deliver emails that are tagged as spam by SpamAssassin, click here now.

... there seems to be no way to reverse this via Cpanel once it's done. Is this worth reporting as a bug?

To disable this functionality, simply click "Disable Auto-Delete Spam."

If you do not see this button, may I ask which theme you are using?

When is cPanel due to be a bea release?

Can I see a feature list for WHM/cPanel 12?
cPanel 11 is still in the release stages so don't expect version 12 yet :).

As always, you are welcome to use the EDGE build as it has all the newest features our developers are working on. However, because it is cutting/bleeding edge and as a result rather untested, it is not intended and not recommended for production servers.

Additionally, there is currently no publicly available feature list of what to expect in version 12.
