I would like to manually compile Apache to the latest version since cPanel doesn't have this installed.

Could someone give me some basic guideline as to what needs to be done?

Just a tip from working with apache for almost 10 years ....

If this is a production server and you have to ask, then don't do it.

If you still want to have at it:
Compiling and Installing - Apache HTTP Server

Is a good place to start. There's nothing too special about apache on cPanel though you need to assure you at least include all of the modules you are using now or face production errors.

This is not some I recommend. In fact, I don't think I would even do this as a paid service to our clients because there is simply too many things that can go wrong with very little upside to running the latest version.
