I am needing to upgrade OpenSSH for PCI certification. How do I go about doing this in WHM?

You won't be able to do this through WHM. You will have to do this directly through SSH. You may be able to have yum do it:

    yum upgrade Openssh

Are you sure you need that upgrade? Usually, RedHat backport all security patches to latest package release, even if it looks like an older version.
