Use external Mailserver for all services?

Hello everyone,
I am looking for a possiblity to setup an SMTP-Relay for every domain, including the main domain, cpanel runs on.

Is that possible?

Btw: Would it be possible to make cPanel install joomla automatically just like it does with wordpress?
