Use just one server as SMTP for all clients?

    To be able to use just one server as SMTP for all clients on different servers
    we need to add each client as an account on the SMTP server, right ?

    But then if they are sending mail to themself, it will check locally first.
    So we need to remove them from the localdomain file but then they can't send
    since they are not local, right ?

    Anyone setup a dedicated SMTP server with a custom exim.conf to be able to
    do this smoothly ?

    Pretty much. Shorten your current MX record TTL's; wait out the old TTL; switch MX records to point to new server; verify delivery; lengthen TTL's.

    The file you want to add the domains to is /etc/remotedomains (those that you remove or comment out in /etc/localdomains).
