I'll be moving a half dozen of my accounts to a new host. All domains are using Cloudflare. Would the best way to accomplish this is if I use the same hostname "fast.hostname.com" on the new server, restore the client sites to the new server, and then change the IP addresses in Cloudflare to the new server?
Thanks for any advice.

I'm assuming the accounts/domains will be using the same nameservers? If so, then you should be able to do so.

You may see some DNS resolution weirdness while the IP change propagates though.

When I begin I guess I'll have to login to Cloudflare and change the DNS of the accounts to the new Server IP. Someone needs to create a script to do that :)
