Want to configure a Domain for Just Mail

We want to use a Linux Server with Cpanel to only serve as a a mail server for certain domains. The DNS for these domains is elsewhere and also their Web/FTP is already running on a Windows Server. How do we setup these domains in Cpanel ? If we create a new account on the Linux/Cpanel server it automatically creates the DNS/Web/FTP/Mail for the domain. We only want the Mail.

Also what do we set for the MX record in the DNS for the domain on the other server ?
