    Hi all,

I have a client that wants me to use web fowarding so that their domain points to web.me.com but continue using our sever for email.

Am I correct in thinking that all I need to do is :
WHM >> Main >> DNS Functions >> Edit DNS Zone
and then change the www CNAME record from their current domain to web.me.com.

    ???

Yes... if the nameservers on that server are authoritative for the domain name.

I guess this is a really dumb question, but how do I determine if the "nameservers on this server are authoritative for the domain name"?

Do a whois lookup against their domain and ensure that the nameservers listed are those that are configured on your server.
