Is there a way to setup WHMCS/cPanel to create a account to automatically install wordpress or some other software of my choice but as a automated task and only that piece of software allowed to be installed.

There are no native options included with cPanel/WHM that will automatically install WordPress after account creation. However, you could develop a script that automatically installs WordPress and configure it to run after account creation:
